It is possible, depending on the following factors.
1. You are the ONLY one that has the Administrator privilege.
2. Every person that shares the computer has their own account on the computer.
If the above 2 conditions are met, then you can set NTFS permissions on the log files or folders so that only you can read/write them; others will be denied the access to those files.
Another approach is to use PGP encryption.
You can use PGP or GPG to encrypt your message files by using your private key so that even someone else gets your files, they cannot read it without your private key. You can have your private key on a CDROM or something portable, and use it every time you want to decrypt or encrypt your files.
However, theoretically, once someone can reach the computer physically, there will be no security at all. It is just a matter of time.
